Cookies, Cookies, Cookies and Lemon Curd

Are you already in Christmas spirits?
Me, I’m starting right now again. After a few weeks of hustling and bustling I’m ready for Christmas peace to come 😉
Alright, I know, it does not work this way, so I am trying to be the calming influence on myself and others.
I’m already excited about tomorrow, then we will go to our neighbourhood-winter-wonderland and pick a Christmas tree. Decorating the tree has always been a wonderful introduction to the holidays.

I adapted the recipe from Y Lee, the lovely blogger behind Lemonpi.

Lady Grey Cookies with Lemon Curd

ingredients_150pxIt makes about 30 sandwiched cookies

180 g butter, at room temperature
60 g icing sugar
180 g flour
5 g lady grey tea powder
60 g cornflour
pinch of salt

Preheat oven to 170°C (345°F).
Stir butter and icing sugar until creamy.
Add the flour, tea, cornflour and salt. Process until dough gets homogeneous.
Wrap dough in cling film and chill for 15 minutes.Roll teaspoonfuls of dough into balls.
Arrange them on the baking sheets, allow a little space in between for spreading.
Indent the tops with a fork. Bake the cookies for 15 minutes or until lightly golden brown.
Allow to cool completely before sandwiching them with Lemon Curd.
