Today I want to share a recipe with you which is easy and quick to make. Perfect if you receive unexpected guests 🙂
Almond Cinnamon Blondies
It makes about 12 cupcakes (20x20cm tin)
115 g butter, at room temperature
200 g brown sugar
1 large egg
1 egg yolk
150 g flour
1/2 teaspoon baking powder
1 pinch of salt
1 tablespoon cinnamon, grinded
85 g almonds, grinded
Heat the butter together with brown sugar in a coated pan.
Simmer on a medium heat until the sugar melts.
Allow to cool.
Preheat oven to 180°C (355°F).
In a bowl, mix the butter-sugar combination with egg and egg yolk.
Sift flour, baking powder, salt and cinnamon into the bowl and stir gently.
Finally add grinded almonds and stir until just combined.
Fill dough into a with tin liner coated tin.
Bake blondies for about 25 minutes or until lightly golden brown.
Allow to cool completely.
